Rulo Milk cream, also known as Kaymak, is a rich and decadent dairy product that is popular in many Middle Eastern, Central Asian, and Balkan cuisines. It is made by slowly simmering fresh, raw milk until a layer of cream rises to the surface. The cream is then skimmed off and allowed to cool and thicken.
The resulting product is a creamy, slightly tangy spread that is similar in texture to clotted cream or French crème fraîche.
